Description
A delicious side dish featuring acorn squash roasted with Parmesan and herbs.
Ingredients

- 2 acorn squashes, halved and seeded
- 4 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and remove the seeds.
- Brush the inside of each squash half with olive oil.
- Sprinkle salt, pepper, thyme, and rosemary inside each half.
- Fill each squash half with grated Parmesan cheese.
- Place the squash halves on a baking sheet cut side up.
- Roast for 30-35 minutes until tender.
- Serve warm.
Notes
- Adjust herbs according to your taste.
- For extra flavor, add garlic powder.
- Store leftovers in the fridge for up to 3 days.
