Description

A delicious side dish featuring acorn squash roasted with Parmesan and herbs.


Ingredients

  • 2 acorn squashes, halved and seeded
  • 4 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and remove the seeds.
  3. Brush the inside of each squash half with olive oil.
  4. Sprinkle salt, pepper, thyme, and rosemary inside each half.
  5. Fill each squash half with grated Parmesan cheese.
  6. Place the squash halves on a baking sheet cut side up.
  7. Roast for 30-35 minutes until tender.
  8. Serve warm.

  • Adjust herbs according to your taste.
  • For extra flavor, add garlic powder.
