Ingredients

- 1 pound ground beef
- 2 large potatoes, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add the diced potatoes, bell pepper, onion, and garlic. Cook until the potatoes are tender.
- Stir in the black beans, corn, chili powder, cumin, salt, and pepper.
- Cover the skillet and let it cook for an additional 5 minutes.
- Sprinkle cheese on top and cover until melted.
