Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the diced potatoes, bell pepper, onion, and garlic. Cook until the potatoes are tender.
  3. Stir in the black beans, corn, chili powder, cumin, salt, and pepper.
  4. Cover the skillet and let it cook for an additional 5 minutes.
  5. Sprinkle cheese on top and cover until melted.
