Description
A fresh and colorful salad made with shaved rainbow carrots and sesame dressing.
Ingredients

- 4 rainbow carrots, shaved
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame seeds
- 1 green onion, chopped
- Salt to taste
Instructions
- Shave the rainbow carrots using a vegetable peeler.
- In a bowl, mix sesame oil, soy sauce, rice vinegar, honey, and salt.
- Add the shaved carrots to the bowl and toss to coat.
- Sprinkle sesame seeds and chopped green onion on top.
- Serve immediately or chill before serving.
Notes
- Use organic carrots for better flavor.
- Adjust the sweetness by adding more or less honey.
- This salad is best served fresh.
