Mushroom and spinach lasagna is a hearty and flavorful dish that combines layers of pasta, rich mushroom sauce, and spinach.
Ingredients

- 9 lasagna noodles
- 2 cups mushrooms, sliced
- 2 cups spinach, fresh
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups marinara sauce
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a pan, heat olive oil and sauté garlic and mushrooms until soft.
- Add spinach and cook until wilted. Season with salt and pepper.
- In a baking dish, spread a layer of marinara sauce.
- Layer 3 lasagna noodles, followed by ricotta, mushroom-spinach mixture, and mozzarella.
- Repeat layers, finishing with noodles and marinara sauce on top.
- Sprinkle with Parmesan cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly.
Notes
- Let the lasagna sit for 10 minutes before slicing.
- Feel free to add other vegetables like zucchini or bell peppers.
