Description

A traditional Mexican stew made with beef, spices, and herbs.


Ingredients

  • 3 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp thyme
  • 4 cups beef broth
  • Salt to taste

Instructions

  1. Soak guajillo and ancho chiles in hot water for 15 minutes.
  2. Remove stems and seeds from chiles.
  3. Blend chiles with onion, garlic, cumin, oregano, thyme, and a bit of beef broth until smooth.
  4. Season beef with salt and sear in a pot.
  5. Add blended sauce and remaining beef broth to the pot.
  6. Simmer on low heat for 3 hours until beef is tender.
  7. Shred the beef and serve with broth.

Notes

  • Serve with tortillas for dipping.
  • Garnish with diced onions and cilantro.
