Description
A traditional Mexican stew made with beef, spices, and herbs.
Ingredients

- 3 lbs beef chuck roast
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp thyme
- 4 cups beef broth
- Salt to taste
Instructions
- Soak guajillo and ancho chiles in hot water for 15 minutes.
- Remove stems and seeds from chiles.
- Blend chiles with onion, garlic, cumin, oregano, thyme, and a bit of beef broth until smooth.
- Season beef with salt and sear in a pot.
- Add blended sauce and remaining beef broth to the pot.
- Simmer on low heat for 3 hours until beef is tender.
- Shred the beef and serve with broth.
Notes
- Serve with tortillas for dipping.
- Garnish with diced onions and cilantro.
