A delicious layered dish made with sweet potatoes, cheese, and vegetables.
Ingredients

- 2 large sweet potatoes, sliced
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach, chopped
- 1 can (15 oz) marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer sweet potato slices over the sauce.
- Spread a layer of ricotta cheese on top of the sweet potatoes.
- Add chopped spinach and season with garlic powder, onion powder, salt, and pepper.
- Repeat the layers until ingredients are used up, finishing with mozzarella and Parmesan cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
Notes
- Let it cool for a few minutes before serving.
- Can be made ahead and stored in the refrigerator.
- Use different vegetables for variety.
