Description

A delicious layered dish made with sweet potatoes, cheese, and vegetables.


Ingredients

  • 2 large sweet potatoes, sliced
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 can (15 oz) marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spread a layer of marinara sauce at the bottom of a baking dish.
  3. Layer sweet potato slices over the sauce.
  4. Spread a layer of ricotta cheese on top of the sweet potatoes.
  5. Add chopped spinach and season with garlic powder, onion powder, salt, and pepper.
  6. Repeat the layers until ingredients are used up, finishing with mozzarella and Parmesan cheese on top.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.

Notes

  • Let it cool for a few minutes before serving.
  • Can be made ahead and stored in the refrigerator.
