- 4 chicken breasts
- 1 cup dill pickle juice
- 1 cup grated parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Marinate chicken breasts in dill pickle juice for at least 30 minutes.
- In a bowl, mix parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
- In another bowl, beat the eggs.
- Coat each chicken breast in egg, then in the parmesan mixture.
- Place the coated chicken on a baking sheet.
- Bake for 25-30 minutes or until chicken is cooked through.
Notes
- For extra crunch, broil for the last 2 minutes.
- Serve with a side salad or vegetables.
- Store leftovers in an airtight container in the fridge.
