A rich and flavorful creamy wild mushroom soup with caramelized onion and kale.
Ingredients

- 1 lb wild mushrooms, sliced
- 1 large onion, diced
- 2 cups kale, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until caramelized, about 10 minutes.
- Add garlic and sliced mushrooms, cooking until mushrooms are tender.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add chopped kale and cook until wilted.
- Stir in heavy cream and season with salt and pepper.
- Blend soup until smooth, if desired.
- Serve hot.
Notes
- Use any variety of wild mushrooms.
- For a vegan option, substitute heavy cream with coconut cream.
