Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cups spinach, chopped
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, salt, and pepper.
- Form the mixture into meatballs and place on a baking sheet.
- Bake meatballs for 20 minutes.
- In a pot, bring chicken broth to a boil and add orzo.
- Cook orzo according to package instructions, then stir in spinach.
- In a saucepan, heat heavy cream until warm.
- Add baked meatballs to the cream and simmer for 5 minutes.
- Serve meatballs over spinach orzo.
Notes
- Adjust seasoning to your taste.
- Use ground turkey for a lighter option.
