Description

A hearty and flavorful pasta salad with a cowboy twist.


Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1 cup black beans, drained and rinsed
  • 1 cup bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup ranch dressing
  • 1/2 cup barbecue sauce
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, tomatoes, corn, black beans, bell pepper, red onion, and cheddar cheese.
  3. In a separate bowl, mix ranch dressing and barbecue sauce.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Add salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
