Description
A hearty and flavorful pasta salad with a cowboy twist.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 cup black beans, drained and rinsed
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1 cup cheddar cheese, shredded
- 1/2 cup ranch dressing
- 1/2 cup barbecue sauce
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, tomatoes, corn, black beans, bell pepper, red onion, and cheddar cheese.
- In a separate bowl, mix ranch dressing and barbecue sauce.
- Pour the dressing over the pasta salad and toss to combine.
- Add salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use any type of pasta you prefer.
- Add grilled chicken or steak for extra protein.
- This salad can be made a day in advance.
