- 2 chicken breasts
- 2 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian seasoning
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic powder, salt, pepper, and Italian seasoning.
- Add chicken breasts and coat them with the mixture.
- Place chicken on a baking sheet.
- Add sliced zucchini and yellow squash around the chicken.
- Drizzle remaining olive oil mixture over the vegetables.
- Bake for 25-30 minutes or until chicken is cooked through.
- Let it rest for 5 minutes before serving.
Notes
- Adjust seasoning to your taste.
- Can substitute chicken with turkey or tofu for a different protein.
- Serve with rice or quinoa for a complete meal.
