Chicken Scampi served with Garlic Parmesan Rice.
Ingredients

- 2 chicken breasts, sliced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup white wine
- 1/4 cup butter
- 1 cup rice
- 2 cups water
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Pepper to taste
- Chopped parsley for garnish
Instructions
- Heat butter in a skillet over medium heat.
- Add garlic and sauté until fragrant.
- Add chicken and cook until browned.
- Pour in chicken broth and white wine; simmer.
- In a pot, combine rice, water, and salt; bring to a boil.
- Reduce heat and cover until rice is cooked.
- Stir in Parmesan cheese into the rice.
- Serve chicken over rice and garnish with parsley.
