A delicious chicken enchilada recipe made with tender chicken, cheese, and a flavorful sauce.

- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 8 tortillas
- 1/2 cup chopped onion
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Sauté onions until soft.
- Add shredded chicken, cumin, and garlic powder. Mix well.
- Spread a layer of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture and roll up.
- Place the rolled tortillas seam side down in the baking dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle shredded cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- Serve with sour cream and chopped cilantro.
- You can adjust the spice level by adding jalapeños.
- Leftovers can be stored in the refrigerator for up to 3 days.
