Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 tortillas
  • 1/2 cup chopped onion
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté onions until soft.
  4. Add shredded chicken, cumin, and garlic powder. Mix well.
  5. Spread a layer of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the chicken mixture and roll up.
  7. Place the rolled tortillas seam side down in the baking dish.
  8. Pour remaining enchilada sauce over the top.
  9. Sprinkle shredded cheese on top.
  10. Bake for 20-25 minutes until cheese is melted and bubbly.
