- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup heavy cream
- 2 tablespoons crushed black peppercorns
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the beef on all sides until browned.
- Transfer the skillet to the oven and roast for 20-25 minutes, or until desired doneness.
- Remove the beef from the oven and let it rest.
- In the same skillet, add heavy cream, crushed peppercorns, and Dijon mustard.
- Simmer until the sauce thickens.
- Slice the beef and serve with the creamy peppercorn sauce on top.
- Garnish with chopped parsley.
